. WIAW… round three .

May 25, 2011

Hi friends! 😀

You guys had so many great thoughts on the scale. The general consensus? How you feel and how you treat your body is more important than the number you see between your toes. I loved hearing that so many of you don’t let the scale control your lives or ruin your day, and I also loved seeing so many new faces popping up in the comments section. Welcome! You guys all make me smile real big 😀

(and yes, I’ll be sharing the recipe for Snobby Joes sometime soon)

Another thing that makes me smile? Wednesdays! Mmm hmm. It’s that time of the week again…

The day where I get to indulge my curiosity and have a peek at all the delicious things that everyone is eating; and to share my own delicious eats, of course. Although, I’ve gotta say that this morning definitely didn’t start out on a tasty note. In fact, it was just downright dirty…

No, that’s not chocolate in my oats – it’s what happens when you leave breakfast bubbling away on the stove and go off to read some blogs [for longer than you should]. You come back to a kitchen that smells like crap and a pot of oatmeal that probably tastes like it too. Thankfully, round two was much improved.

I had a serious craving for the tangy wonderful-ness of yogurt this morning, so I plopped some of the Greek stuff on top of my eggy banana oats along with some roasted almond butter, and sat down to catch up on blogs without having to worry about burning my house down.

Dee-lish.

It was then off to torture my legs, butt, and ego with a lower body strength routine that I swear almost made me cry. Oh lunges and squats, why oh why do you have to hurt so good? I’ve recently decreased the amount of running that I do and started to focus more on strength training because it doesn’t bother my foot as much. So far I’m really loving it, although I might be singing a different tune when I wake up unable to walk up the stairs tomorrow morning.

Post workout noshings were very uncharacteristic considering the current state of the weather outside. It was another dreary day, but all I wanted was fresh summer fruit and a cold smoothie.

I’ve given up trying to figure out why I crave the things I do, which is probably a good thing because today’s lunch would have left me scratching my head wondering where my “unique” cravings come from…

I was in the mood for one of my pumpkin hummus tortilla pizzas, but because I was also having a huge (unpictured) salad best, I wasn’t really feeling the extra veggies… so I went with fruit instead – more specifically, apples. I spread a whole wheat wrap with a few spoonfuls of canned pumpkin, followed by a few spoonfuls of hummus. Then, I made a layer out of thinly sliced apples and topped the whole thing off with shredded mozza before popping it in the oven for about 20 minutes.

Oh. my. word.

I think I finished this meal in record time – it was just that good. The cheese remained gooey on the inside, while a slightly crispy crust formed on the top. And you know how I love my apple and hummus combo. This was just… I have no words. None, except: go make this now and thank me later.

. – .- . – .

Between the hours of lunch and dinner, my appetite becomes an insatiable beast. Still, I do my best to try and tame it, although sometimes my efforts are in vain. Today, however, I actually succeeded… kind of.

I randomly pick at almonds when I feel the munchies coming on, and now all I have left is an empty bag. Sad face. Good thing I managed to save enough to make a fresh batch of cookie dough balls

You didn’t think I could go a day without one, did you? I had one of these babies alongside a bowl of cottage cheese mixed with nooch. Odd, yes, but I think we’ve already established that that’s the way my cravings roll. This was the perfect combination of sweet and salty, and held me over nicely until dinner.

Dinner is always the hardest meal for me to come up with, probably because I just get tired of trying to be creative with food as the day goes on. I had a particularly difficult time trying to decide on tonight’s meal, so I went with something that hasn’t let me down thus far: oats… and cheese. Err… wha?

If you’ve never tried savory oats before, you need to change that. I know it sounds strange, but trust me on this one. Have I ever let you down before? I cooked a mix of Scottish and steel cut oats in veggie broth, added a heaping spoonful of nooch, an egg white, and a wedge of Laughing Cow, topped the whole thing with hummus, and added some mixed veggies and a softboiled egg to end up with a complete meal.

Dominated.

I always finish off the day with a snack before turning in for the night, but they rarely make it onto the blog because a) the lighting sucks for picture taking, and b) I’m usually relaxing and too lazy to whip out the DSLR. Lately, I’ve been putting in more of an effort to capture some of my nightly noshings because it’s something I wanted to talk about, so expect a post on that in the near future.

Much love!

What time of the day do you usually find that hunger hits you the hardest?

What’s your favorite go-to dinner?

I love looking at your meals, your photos are so pretty and the food always looks delicious.

What do you use to make your smoothies? Just a regular blender?

  2. May 25, 2011 5:49 pm

I keep meaning to snap picks of my nightly snacks for a post too… but keep failing :/ whoops!
all your meals look delicious, as per usual! love the pizza combo idea.
i wish i could do savory oats…but something about them just doesn’t jive with me! it just feels so…wrong. lol.
I’m glad to hear you’re enjoying the strength training!
as for when hunger hits the hardest…either mid-morning or mid-afternoon.

  3. May 25, 2011 5:50 pm

So um… do you want to come cook for me? 😀 Haha. I love your WIAW posts!

  4. May 25, 2011 6:02 pm

Umm can we please be best friends? Everything you ate today looks perfect and exactly what I would love to enjoy eating! I have weirdo cravings too 🙂
You are so good at listening to what your body needs and is asking for, that is definitely something I need to work on
And you’re right I DO need to try savory oats! I have only ever had them for breakfast with sweet ingredients, that must change pronto
I also get the hungriest during lunch and dinner, I can never seem to tame the hunger beast during that time!

  5. May 25, 2011 6:06 pm

I’ve never tried savory oats before, but they look really tasty! Definitely a must try 🙂 I always get the hungriest between lunch and dinner, but almonds are my favorite nut to snack on.

  6. May 25, 2011 6:19 pm

I love your eats! You always make such tasty concoctions haha I’m glad your oats came out a- okay in the end, my they look good! 🙂 have a wonderful Wednesday!!!

  7. May 25, 2011 6:22 pm

I have a bad habit of leaving my oats too long on the stove. Hey, it’s not my fault okay. I get bored sitting there so I run off to go do something else then forget about them. 😛

Hunger always hits me the hardest around 2-3 ish. My snack is always huuge at that time, like usually bigger than my lunch so I think my real lunch is more like a ‘pre lunch’ lol.

That is the most unique pizza i’ve ever seen! Love it!
I’ve never been able to get myself to like savory oats. They just don’t do it for me.

  8. May 25, 2011 6:22 pm

I’m with Jess, something about savory oats just doesn’t “jive” with me but I’m not opposed to having sweet oats for dinner. Can I just say that pizza looks a-mazing?! I must try that, like tomorrow.

Hunger always hits me hardest mid-afternoon/dinner time!

  9. May 25, 2011 6:23 pm

What a day filled with yummy treats! I too was craving fruit and smoothies today – it must be the warmer weather – your smoothie looks great – so thick!
I made one today with strawberries, blueberries, pineapple, vanilla protein powder and almond milk.
I usually get most hungry right before dinner. Thanks for sharing the pizza recipe – anything with hummus and cheese I adore – I’ll have to give it a try.
    Have a great Thursday!
    Aim

hey there!!!!!!!! soooo happy your back!
can you give your recipe for the smoothie?!!!?!!
lots and lots of hugs and kisses

  12. May 25, 2011 7:18 pm

I always get the afternoon munchies too! They’re so much worse when I’m at home during the summer and dno’t have anything to do. I find I’m always in the kitchen then!

  13. May 25, 2011 7:29 pm

Im ALWAYS hungry in the afternoon! I have so many snacks! But hey, it gives me a reason to eat multiple handfuls of cashews!
I need to get on the savory oat train! I’ve heard so many good things about them.

  14. May 25, 2011 7:35 pm

Okay, you’ve convinced me to go buy steel cut oats again. Tomorrow I’m going to trader joes and will def pick up a couple containers. All of your meals looks delicious as always, and if you have some leftover over cookie dough balls…feel free to send em my way. I’am also cutting back on my cardio and starting to lift weights finally. I find that if I swim for 90 minutes, I’m not hungry right away, but if I lift for just 30 minutes…I’m really hungry right when I’m done. I would say I’m hungry first thing in the morning because that’s when I usually do my cardio, and my favorite go to (easy to make) meal is oatmeal of course.

  15. May 25, 2011 8:14 pm

I feel like we eat basically the same and I love it! Loving ALL these eats especially the protein balls- you know how I feel about those. Sadly my Magic Bullet broke so I have to wait another month until I’m home to make more. Ooh and savory oats are my jam! Love them!!

  16. May 25, 2011 8:26 pm

Eek sorry about the oatmeal fail but at least you got a good breakout out of it. I’ve never had greek yogurt on top of my oats before, definitely looks delicious especially with the almond butter on top. Yum!
Lunges kill me too, the first time I got into them I couldn’t pee for days lol Just trying to squat down killed me.

  17. May 25, 2011 8:30 pm

you had me at pumpkin hummus tortilla pizza…. ahhhh I just ate dinner and I want that now! and the snobby joe recipe =) but you promised it so i’ll wait patiently =) hehe!

    Happy WIAW!!!! ❤

  18. May 25, 2011 8:35 pm

Those tortilla pizzas look AMAZINGGGGG 🙂 I had some tortilla/hummus/veg action for lunch today myself!
I think my hunger is most crazy in the morning when I wake up (but also strikes pretty heavy for lunch (or dinner if lunch was dinky). My fave go-to dinner: Making my own mezza plate (hummus, baba ghanouj, taboule or fattoush salad, hot arabic bread and either falafels or kebabs.

  19. May 25, 2011 8:40 pm

I’m in love with your food combos – especially the pizza. So unique! Looks delicious too. I usually get super hungry around 5pm if I don’t have an afternoon snack around 3 or 4.

  20. May 25, 2011 8:42 pm

O, you should see my weird concoctions I come up with when it comes to following my cravings!

  21. May 25, 2011 8:53 pm

haha that little cookie dough ball looks like it has a face!!

I’m usually hungriest right when I get home from work, especially if I forget to pack myself an afternoon snack! My stomach will be growling and I have to stop myself from digging into what ever I find!

  22. May 25, 2011 10:50 pm

You’re so great 🙂 love you xoxo

I have the biggest hunger in the morning, after I wake up my first steps lead me right to the kitchen! I love those savory oats, I must try them soon – I have seen them a couple times on food blogs, but was a bit hesitant, because I love the sweet variation soo much, but I shouldn´t be affraid to change things up a bit 🙂
I also recently started adding more strenght workouts to my routine instead of cardio. I think it does my body good 🙂
I love summer season because all of the fresh summer fruit you can eat, it is the best thing ever! 🙂

I’m so sorry to hear about your foot!! I recently found out the reason I have such pain in my left knee while exercising is from athritis that is developing 😦 Thats what I get for not listening to my doctors and continuing to exercise last year when i was way to thin. I hope you feel better soon! Im glad to see im not the only one who gets incredibly hungry between lunch and dinner, all i want to do is snack all afternoon. Ill have to try your cottage cheese and nooch trick to quiet my hunger 🙂

  25. May 26, 2011 12:57 am

I have truly never considered savory oats… I think this is something I need to investigate. I love me some sweet cinnamony, chocolatey, and peanut buttery oats, but I think I like the idea of dressing them up dinner style too.
Oh and also I’m loving your fruity-cheesey pizza tortilla. I totally have those moments where I let the cravings take me where they will, too. Sometimes it’s a hit, sometimes a miss. But your pizza tortilla definitely looks like a hit!

  26. May 26, 2011 1:26 am

Oh YUM!! Everything here looks SO good- specially that cookie dough ball 😉

Hunger always SERIOUSLY hits in the afternoon, so my afternoon snacking is one big meal in itself! 😛 And I have to try savoury oatmeal, but I’m not gonna lie, I’m a bit scared…!!

  27. May 26, 2011 1:35 am

Your food looks delicious as always 🙂 I really wish my blender hadn’t of crapped out the other week otherwise I would totally be making your cookie dough balls right now. Oh well the world goes on…cookie dough ball-less…What? Anyway…

Usually my hunger hits the hardest between breakfast and lunch! It’s crazy because i have such a big breakfast but when I’m hungry, I ain’t gonna fight it 😉

My favourite go-to dinners are always changing. It used to be a combination of cous cous, beans, salsa, mixed veg and avocado. Then it moved on to fish fingers, potato and veg…and now it’s stir fry with rice…with salsa mixed in. You must try stir frying with salsa! It adds an extra something something 😉

    xxx

  28. May 26, 2011 5:24 am

Can I PLEASE just come to your house and let you feed me puffins, hummus tortilla pizzas and cookie dough balls?! You. are. just. amazing. at creating such amazing dishes. And your photography is stunning as per usual, you need to teach me! I’m still learning..
I actually get most hungry for dinner and my night-time snack. I find it comforting to go to bed on a happy full tummy..it’s like my body is preparing for the starvation it has to go through whilst I sleep for hours! I love it though and I wouldn’t change my crazy bedtime snacking whilst watching tv and reading blogs – my perfect evening 🙂
My favourite go-to dinner at the moment tends to be a quick lentil curry filled with veggies or a simple stir-fry…both dishes that you can just throw anything that’s in your fridge basically!
    xx

  29. May 26, 2011 5:40 am

mm, your meal as so unique! What a great idea to combine hummus and pumpin on pizza- I can really taste it when I think of it 🙂
I think it is hard to figur out every meal, so In kind of think of it all day long 😛 Breakfast is uasually the easiest, then lunch and dinner is harder..

I’ve definitely done the same thing with oats, even the same reason for forgetting them! yours look really good the second time around though:) That hummus apple and cheese tortilla pizza is definitely interesting, hehe. Good day of eats!

  31. May 26, 2011 6:15 am

I tend to do the same thing with the bag of almonds when I am hungry and I don’t now what else to eat for a snack. They are just too good to resist and satiate the hunger better than anything else. Usually it hits me between 2 and 3 in the afternoon and sometimes it hits me so hard that I have dinner at 3 p.m. and a snack at dinner time.

I am not sure about the pizza but the savory oats go directly to my to-do list. I’ve been a big fan of savory oats since I tried Tat’s eggs and oats. Oats are good for more things than we think 🙂 .

  32. May 26, 2011 6:40 am

So many good eats! I really get hungry around 2:30 (I eat lunch at noon) and I usually have a snack around then – because if I don’t I’ll just binge at dinner – and that’s never pretty 🙂 My favorite go-to dinner is is stuffed peppers. My fiance and I both love them, and they’re really simple to make! Once I get my crockpot though, I think my world might change 🙂 I hope you have a great day!!

  33. May 26, 2011 6:51 am

    All your meals look delicious!
The pizza sounds great, but the dinner looks awesome as well. I adore savory oats!
I become a hungry beast in the morning. Nothing can fill me up!

  34. May 26, 2011 6:54 am

That lunch looks quite interesting! I’ve never tried apples and hummus. Do you use the plain original hummus? or just any hummus?
The past few days I’ve been trying to incorporate new things into my daily foods but this morning I just wanted the same old bowl of cereal and yogurt. Maybe lunch I’ll do something creative!
I seriously love your blog. I think I tell you this everyday
You also probably think I’m some creep but I swear I’m not haha!

    • May 26, 2011 7:17 am

Yeah I just use the plain original hummus – I’m not sure it would taste quite the same with garlic or other herb/spices.

      And I don’t think you’re a creeper at all. ❤ ❤

  35. May 26, 2011 7:55 am

Hunger hits me big time in the morning– that’s definitely when I eat the most. My go to dinner? Whatever my om serves ;).

I have had savory oats– I made a pizza one before :). Although oats don’t hold me over well, so I use other hot cereals– like cream of rice or cream of kasha!

  36. May 26, 2011 8:04 am

That pupmkin hummus tortilla sounds incredible!! What an amazing idea! Will definitely be having to try that!

  37. May 26, 2011 12:02 pm

How strange… I was just thinking the other day that I haven’t had savory oats in quite a while. Speaking of oats, I’m pretty sure I wouldn’t mind oat charcoal… I’m kind of weird like that. I like things well done. 😉

I´m writing from a country, far and away- Iceland to be precise- but the internet is such a small world so I´ve been enjoying reading all kind of blogs, related to food and health. Yours was, and IS, my favorite, without a doubt! Your strong spirit shines through your writing, and your food…..amazing!

Hunger is hitting hard this exact moment (dinner time in Iceland)- these cherry tomatoes for my pasta dish are roasting unusually slow!

My favourite go- to dinner? Hmm… Spring rolls dipped in lots of almond butter. Ah, 5 minutes in the microwave and they are there to enjoy.

Thank you for all your support Amanda ❤

Yogurt on top of oats sounds so good! Too bad I hate Greek yogurt 😦 Your meals look fantastic!

  44. May 26, 2011 5:12 pm

I am going to need to read your post on the scale, I am so for throwing it away! 🙂

Love the look and description of your eggy banana oats with yogurt AND the hummus pumpkin pizza! Three of my favorite things (including the cheese) and I LOVE funky flavor combos mm mm!

Foods I can’t live without – peanut butter would probably be tops! Also I like bananas, oats, chocolate, and crunchy veggies 🙂

I’m so glad I happened across your blog, it’s lovely! 🙂

  45. May 26, 2011 7:42 pm

Yes! Another savory oats lover! Best go-to dinner in my book…as is just about anything topped with an egg!

That pizza looks insanely delicious! I would never have thought to combine pumpkin and hummus, much less throw an apple in there, but I am seriously drooling right now! I NEED to get my hands on some pumpkin in a bad way! I’ve been looking EVERYWHERE for it!
