Who doesn’t love starting the day with a delicious blueberry muffin? This breakfast bake has the doughy consistency of a muffin, with the staying power of a bowl of oats. A perfect way to kick start your day.

Ingredients (serves one)

  • ¼ cup rolled oats
  • 2 Tbsp. oat bran
  • 2 Tbsp. flour of choice (I use spelt)
  • ¼ tsp. baking powder
  • pinch of salt
  • ¼ cup vanilla almond milk
  • ½ Tbsp. maple syrup
  • ½ tsp. vanilla flavor
  • ¼ cup fresh or frozen blueberries


  1. Preheat oven to 375°F, and lightly spray an individual sized ramekin with cooking oil.
  2. In a medium bowl, combine oats, oat bran, flour, baking powder, and salt.
  3. Add almond milk, maple syrup, and vanilla. Gently stir until well combined.
  4. Fold in blueberries, and transfer batter to prepared ramekin.
  5. Bake for 25 – 30 minutes, and allow to cool before adding toppings of your choice.

    I made this for breakfast this morning… DELISH! It actually does taste just like a blueberry muffin! It definitely put a little pep in my step today 🙂 just what I needed!

    P.S. I came across your blog a few days ago via some other blogs I keep up with.. just wanted to say that I love your take on food, eating, and exercise – it couldn’t be more aligned with mine!     So I’ve been following you for a while now and finally got around to trying one of your “breakfast bakes”. I had some leftover cinnamon brown sugar and cream cheese frosting so I put that on top (albeit NOT healthy) but even without that super-sweetness, this recipe was AMAZING! Thank you for such a great idea — I know we’ll be making a lot of these in the future!! I’m going to blog this (and link to you) in Monday’s post. I’ll keep you posted. 🙂
