Holy smokes, it’s September. And two weeks until I move. And I’m kind of freaking out about it 😯 I will start packing eventually, but before I do, I have some good news and some bad news.

The bad news is that Hotmail decided to randomly delete all of the messages in my inbox…

… and it doesn’t look like they’re coming back anytime soon. So, if you sent me an e-mail within the last little while and I didn’t respond, chances are it’s because my inbox ate it. I’m doing my best to try and recall what all was in there, but that’s proving easier said then done.

The good news is that today’s the day where I announce the giveaway winner! 😀

For now, though, I have something else to share with you – a recipe for one of my favorite soups.

I know that it’s still technically summer for a few more weeks, but it’s already starting to feel rather Fallish around here, and I’ve really been craving the comfort of a warm bowl of soup as the days become cooler and darker. The combination of warming spices and the seasonal flavors of pumpkin and apple make this soup one of my Fall-time favorites. I hope you enjoy it as well 😀

. curried apple pumpkin soup .

Ingredients (serves 1, ~ 2 cups)

  • 1 cup vegetable broth
  • ½ cup canned pumpkin puree
  • 1 tsp. coconut oil
  • ½ apple (any variety), thinly sliced
  • ¼ of a white onion, sliced
  • 1 tsp. curry powder
  • ½ tsp. cinnamon
  • ½ tsp. cumin
  • dash of ginger, cloves, nutmeg

Instructions

1. Begin by heating a small skillet over medium heat. Add coconut oil. When it melts and becomes hot, toss in the onions and cook until they begin to brown; ~ 3 minutes.

2. Stir in the apple slices. Cook until they begin to soften; ~3 minutes.

3. Add your spices, stirring well to ensure everything is evenly coated.

4. Reduce heat to low, cover the skillet, and continue cooking for ~ 5 minutes.

5. In the meantime, combine broth and pumpkin in a small saucepan set over medium heat.

6. When the broth begins to bubble, add the apple/onion mixture and bring the whole thing to a boil.

7. Once it begins to boil, cover the saucepan, reduce the heat to medium-low, and allow it to simmer for another 15-20 minutes, stirring occasionally.

8. After 20 minutes, remove the saucepan from the stove and allow it to cool slightly. Pour the contents into a blender and blend until smooth. An immersion blender would also work.

9. Empty into a bowl and enjoy!

I absolutely adore this soup, especially when it’s paired with eggs and avocados…

… or almond butter and honey…

Sometimes I even like to toss in some extra veggies, beans, and a random grain (rice, quinoa, bulgur) and use it as a base for a thick and hearty stew.

A part of me will miss summer, especially when all of the melons and berries disappear, but I can’t deny that Fall tastes mighty fine too.

    Wow this soup looks yummy! I love butternutsquash soup! Its one I eat a lot of in the fall !

    I love pumpkin anything, except pumpkin pie : p so weird I don’t like it! lol

    Best part of the summer was my WEDDING day! Im not sad to see summer go, I mean I just live for the days, so every day, no matter what season, I enjoy : )

      I thought I was the only one who didn’t like pumpkin pie! I’ve only had it a few times and each time it was like… eugh. I think I’ll be sticking to apple 🙂

    It still feels like summer in my parts, but according to the 14 day forecast the temperature is supposed to dip soon. You can bet that when that happens I will definitely be craving soup and this recipe sounds divine! I’ve never thought of having apple in soup before, that’s such a creative idea! I love pumpkin in microwave protein bakes, and lately I’ve even been loving them in smoothies! I’ll be sad to see the sun go, the past few years have all been wet falls, but if this is a sunny fall I’ll be a happy camper 🙂

    Sorry to hear about your inbox–reminds me of the time my flash drive got corrupted and I lost all my schoolwork for the semester. It was not a happy day.

    Anyway, I the only pumpkin I’ve eaten in a long time was in a muffin… I love squash though, so I guess it’s not that different? I’ll have to give the soup a try when it gets a little cooler.

    The best part of my summer was graduating (though that was in May, so technically still spring), and moving into my first apartment 🙂

    I think pumpkin pie is my fave way to eat the stuff :D. But in all honesty I have never had pumpkin in much else!

    Summer is not quite gone here– we are in a hot stretch, and it was almost 90 degrees here today (and super humid), and tomorrow we are in for a 96* scorcher! I am still grasping onto the berries while I can, but surprisingly, my melon jag has gone away (I would eat a half at once up until the end of last week 😯 ) Is this a sign that fall is on the way?

    I love everything pumpkin flavored, but I sorta skeeve pumpkin straight from the can. I think it has to do with the fact that I got the stomach bug the day after I ate it haha. But still, pumpkin coffee..bread..muffins..count me in!

    I will definitley miss the sunshine in the evening. I hate when it gets dark early. Even worse waking up when it’s still dark. blah. But my favorite part of the summer was going to York beach, Maine with my family. Nothing like a relaxing vacation to calm the mind.

      I can’t say that I’ll miss it still being bright out when I was trying to fall asleep at 10, but I’ll miss the longer days for sure… especially when February hits!

    Mmm, I just love soups like this!
    Iv never had canned pumpkin- it really doesn’t exist where I live, hurumph. I guess I could replace it with pureed bnut squash? I imagine the apple will give a lovely sweetness.
    Iv made like a vegan mac’n cheese with a pureed bnut squash, nutritional yeast, soymilk, saucy thing- twas good!
    Nothing too thrilling about my Summer, so I say bring on Autumn!

      Butternut would work too! I’ve done it with bnut and sweet potato before, and both turned out fantastic. And I’ve come across a few vegan cheeze recipes that use bnut squash… I’ve always been curious to try them out, and I might just have to if you recommend them 😀

    This, mornin’ actually, since it was rather chilly, I backed me up some pumpkin puree straight from the can with some pumpkin pie spice added in of course.
    It was just all too lovely.

    Aaah, I’ve made a pumpkin soup quite similar to this a many-a-time! Something about pumpkin (well most winter squash/vegetables) leaves you feeling so warm inside. ❤

    I'm so so so excited to see fall 'rounding the corner, and i just cant say it enough!

    Holla at to girl for pumpkin!! My favorite ways to nosh on that glorious fruit are smoothies, protein bars, with Greek yogurt, and just straight outta the jar with nut butter YUM!!!
    I’m kinda sad to see summer leave, but definitely not sad to say bye bye to heat…even though we’ll prolly have it til November thanks to dumb Texas haha

    Cheers! And by cheers I mean that I would DRINK that soup! Looks delish.
    I think my favorite way of eating pumpkin is mixed with yogurt over warm apples so this is right up my alley — especially since dairy is an occasional thing with me and most often is a no.

    SO sad to see Summer go, I hate the cold. BUT don’t feel too bad for me I live in South Florida.

    Oh gosh, do I have to choose?! Pumpkin bread is amazing, so I would have to go with that.
    I am sad Summer is over- esp b/c I’m a teacher and had to go back to school today. I already feel sad that I can’t spend as much time reading and commenting on blogs! Gotta get back into a groove again I guess!

      It’s one of my favorite soups, so I had to do another post on it 😀

      And I’d definitely send you some pumpkin! The funny thing is that we have tonnes pretty much all year round, and then run out in October when everyone starts buying it for pies lol

    As a kid I hated pumpkin. Maybe because I couldn’t make a difference between a melon and a pumpkin (I thought that melon was raw pumpkin 😀 ) and I have always hated melons… Now I am in love with it.

    Before I came to Japan there was only one way I would eat it if we don’t count baby purees – in a dessert called tikvenik. The name comes from the word for pumpkin in my language which is tikva. It is basically phyllo pastry with pumpkin filling that I make from pumpkin, brown sugar, chopped walnuts, raisins soaked in rum (or whatever alcohol I have on hand. Whisky works fine, too.) and, of course, loads of cinnamon. I am sure there are pictures somewhere on my blog but I am too lazy to look for them 😛 .

    In Japan kabocha is very popular so I found two new favorites – kabocha tempura and kabocha salad. I didn’t like the ingredients list of the salad so I made it my own way and now I can’t have enough of it. I buy frozen kabocha (lazy girl here), thaw it, chop it and mix it with vanilla custard yogurt. Simple, yet delish. It is a little ugly and gets even uglier after I put cinnamon in it but who cares when it tastes so good 🙂 .

    Our summer isn’t going anywhere yet. A typhoon is coming our way but this doesn’t make it less hot. I think September will give us the kind of weather I usually call summer unlike August better known as hell on earth.

    My favourite way to eat pumpkin is either in oats, or on a pizza with spinach and pine nuts.
    Ive actually been tossing up which one to have to dinner tonight.

    No, no, no!! Kicking and screaming, I hate the end of summer… I will miss the abundance of fresh produce and the WARM WEATHER!! AHHHHH!!

    Um, okay. I think my favorite way to eat (canned) pumpkin is in oat bran or oatmeal. But I really prefer fresh pumpkin / squash. Roasted.

    Aw, I love pumpkin! And that soup sounds awesome! I like it in baked goods and lattes :). I am sad to see summer go…it felt like it went way too fast. But, I do love fall- I’m just not a huge fan of winter, so it fall could just stay that way I would be much happier haha

    I lovee pumpkin cheesecake with a gingersnap crust!! I might just make it this Thanksgiving and share the recipe. 🙂 Pumpkin pie though, not so much. I love pumpkin with greek yogurt too! And fresh roasted pumpkin seeds. This soup looks great though, definitely something I might try!

    Thank you for this!!! I made this soup tonight and it was fabulous! I added coconut milk (from a can) to tonight’s bowl and it was super creamy, tomorrow I am going to do a more chunky version with the leftovers, I made a big batch! Pumpkin bread is so good during the fall, warm and spread with a little almond butter or coconut butter takes it over the top. And pumpkin curry is another orange fave of mine 🙂 But this soup is now one of my favorite pumpkin dishes now too, I am making it more my madre next time I see her for sure.

    I’ll take pumpkin any way! I like things pumpkin spiced. My little jar of pumpkin pie spice? favorite ever. I use it in smoothies, oats, coffee, so good! I’m excited for the seasons to change mainly for this reason. Love fall flavors!

    Curried apple pumpkin soups sounds so nice! Hotmail has been being a biyatch to me recently too…sending all my messages later, not using the right ‘server’, ughhhhh. Hmm…I’m still doing summer since I’m on vacation in Scandinavia but as of next week I suppose I’ll be sad to see all my traveling go until the next time around.     I love pumpkin soup, I am often making pumpkin-carrot soup or pumpkin-orange soup (no wonder my skin´s turned orange :).
    Pumpkin oatmeal is amazing, canned pumpkin or pumpkin puree are great stuff and I like pumpkin “sauce” – pumpkin blended with nut butter and a bit of cocoa or coffee.
    I am sad to see the summer go away, because it means going back to work, but all nice things have to end one day, because other way we just wouldn´t appreciate them 🙂

    Tinned pumpkin can be pretty hard and expensive to get hold of in the UK, I think I’ll be buying up a lot of pumpkins around Halloween and make my own puree! I love it in oats and smoothies and I have a great recipe for pumpkin spice bars that are delicious!

    That soup looks fantastic. My favorite way to eat pumpkin is honestly ANY way! I have a slight obsession with the squash, and will add pumpkin puree into smoothies, oatmeal, muffins, cake, bread, lattes, and parfaits. I’ve tried pumpkin soup before, but have never actually gone out on a limb to make it myself. This recipe might be the start of something new 😉

    Eeee I remember this recipe from your old blog! I remember thinking ‘that sounds really good!!’ but I’m actually not much into soup because it never fills me up so I’d definitely use it to make a stew with loads of chunky vegetables and beans in 🙂
    What will I miss about Summer? Long days, summer berries, apricots, tropical fruits, warmer weather (not that it ever gets that warm here haha) and especially having time off from uni…gahhh so don’t want to go back!

    My favorite way to eat pumpkin is in my special home made pumpkin pie ! Kyle says it’s his number 1 favorite all time dessert that I make.

    Ugh packing. I move back to my apartment on Monday and I haven’t even started packing yet. 😛 Luckily a lot of my stuff is already there, but I still have all my clothes/shoes/special foods here!

    This recipe looks amazing! There is nothing better than pumpkin and apples in the fall. I’ve never thought to try them together but I bet it’s good! My favourite way to eat pumpkin is definitely in pumpkin oatmeal. Especially with banana and dried figs! But I just came across a recipe for pumpkin cornbread that looks awesome. I’m definitely going to have to make that this fall.

    MmmM, what a lovely soup! Soups is really one of my favorit meals, especially the thick blended type, like this! I like to roast my veggies in the oven first (pumpkin, sweet potato, onion favorits during fall), and just blend them up with hot water. SO good!

    This season is so beautiful, and Im not sad to leave summer behind. It will be back soon enought! Now, I just enjoy the darker evenings (LOVE that), the fresh air and the beautiful colours!

    My favorite thing about fall is pumpkin. From the can, pumpkin cookies, pumpkin coffee, pumpkin + peanut butter + maple syrup on english muffin. Anything, literally.

    My favorite thing about summer was completing my first half marathon… Even if I did end up screwing up my knee, running the half marathon was probably one of the best decisions of my life.

    Hotmail did it to me too. All my baby (well when i was 10/11 in 2001) emails gone, soo sad. That soup looks delish! But I have to say i don’t really like pumpkin, butternut squash on the other hand cubed and steamed, so so good.

    Summer well, i like being able to go out without a coat/jacket, but i prefer autumn to be honest. London summer’s only last a week or two any how.

    Yay for your move soon! I just moved and I’m so happy! But the packing part isnt so fun, not gonna lie. Especially if you wait until the very last minute like I did 😉

    Apples, Pumpkin, Curry, oh my! Three of my fave things!!! Yum! My favorite way to eat pumpkin is in everything. Totally serious. But I actually eat it everyday in the form of cottage cheese messes and sometimes muffins. I actually just threw together a new recipe tonight that used pumpkin so you’ll be seeing that shortly 🙂 I’ve been dying to try Alexandra (foodfunfreeweights) protein bars too!
    Best part of summer: running camp round 2. i made so many friends and learned so much! I will be back there as a counselor someday so i can act like a fool, run crazy trails, and hopefully inspire other girls to keep running!

    Mmm, I love the look of that soup, especially with the addition of the beans, veggies, and grain. Besides the standard bowl of creamy tomato, I’m usually more of a chunky soup lover, but I may have to try an avocado and egg sandwich dipped into this…yep, I’m a habitual dipper! Haha! 😉

    It’s so hard to believe that it’s almost fall already! I love anything pumpkin, so picking just one is a toughie! I’d have to say pumpkin oats, pumpkin bread, and traditional pumpkin pie with a non-optional dollop of whipped cream are my top three!

    Best part of the summer? All the fun and knew experiences I had while in Cali! Flying by myself, kayaking, seeing the Golden Gate! I still can’t believe I did it!

    As a warm weather person, the saving grace of crisp falls and cold winters is the hearty meals that accompany them. No meal warms me up more than a large bowl of soup! I actually pulled out my crock pot yesterday and set it on my kitchen counter, hoping that it might induce slightly cooler temperatures (nothing extreme, anything *below* 90?). And guess what…I woke up this morning, checked the weather, and voila! 70-degree weather! Perfect day for soup! 🙂

    I’m excited about this recipe because it combines two of my favorite fall flavors. Whole Foods makes a similar seasonal soup, however it’s often hard to find, so now I can make my own and eat it whenever I want!

    Pumpkin favorites: muffins, bread, pancakes and souffle (egg whites microwaved with pumpkin, cinnamon and stevia and topped with whipped cream!). <—I think I may go make this right now. 🙂

    I am sad to see summer go, especially because it was one of the best I've ever had. Favorite memory: eating macadamia nut crunch gelato on the beach in Maui.

    Congrats to the winner! :] The soup looks awesome. Pumpkin is one of my favorites for sure. I’ll be making this a lot as fall comes. My favorite way to eat pumpkin would be in your pumpkin chilies, soups, muffins, with fruit, and I’m sure there are a ton more, but this is all I can think of right now 😀 Oh and I’m definitely sad to see summer go. School, too much working piling up now. The best part of it was relaxing and doing anything I’d like all day. At least fall’s comforting colors, dishes, and holidays are coming!

    I am not sad to see summer go. I hate the heat! I hate that there is no schedule and that I can’t really get anything done with Maya out of school. But I do miss the relaxing weekends and the delicious grilled food!

    It’s starting to feel like fall here, too! It’s been in the 90s for weeks, but on a day trip to the mountains today, it actually seemed like a very nice fall day.

    I love using that same pumpkin purée in recipes, it’s so easy to work with and it just tastes so yummy. I love making pumpkin chocolate cake and pumpkin apple pie with it. I think I’ll have to try out your soup recipe because it sounds perfect for fall-ish days!

    The soup looks really good. I have never tried pumpkin soup before. I will have to add that to my list of things to try.
    Good luck with the move. I always hate moving. It is exciting moving to a new place but the work that it takes to pack and unpack is always unappealing to me. lol

    I have never tried pumpkin anything…that will change this year though.

    I’m going to miss driving my jeep with the doors and windows off my wrangler. I like driving it in the snow.

    Id say I am going to miss the flavors of summer the most. I love being able to eat fruit all day long and drink lemonade and iced tea. My body craves more veggies in the fall, which is good too, but there is something about summer fruit that just brings me joy!
