. no-bake chocolate cheesecake bites .

July 2, 2011

Hooray!

I’m not the only one who can’t be bothered to make her own hummus 😀 Thank you guys for making a lazy girl feel a little less lazy. It may very well happen one day, but seeing as I’ve been saying that for over a year now, it may very well not. Such is the nature of the lazy beast – what can you do.

You can make dessert.

Luckily, one area where laziness doesn’t interfere with my motivation, is in the realm of baking – there, I don’t mind putting in a little extra time and effort to make my own tasty treats… because, apparently, satisfying my sweet tooth is more important than satisfying my savory tooth…

In any case, remember yesterday’s teaser ingredient?

Whoever guessed that it was for cheesecake, guessed correct. Today’s recipe is for a no-bake cheesecake that really couldn’t be any simpler. Hands-on time is minimal, but the payoff is absolutely fantastic. What more could you ask for? The recipe, you say? My pleasure 😀

Hope you enjoy!

. – . – . – .

. no-bake chocolate cheesecake bites .

Ingredients (makes 10 bites)

For the crust:

  • ¼ cup cocoa powder
  • ½ cup almond meal
  • ¾ cup rolled oats
  • ¼ cup honey
  • pinch of salt

For the filling:

  • 1 cup plain Greek yogurt
  • 1 8 oz. package of cream cheese, at room temperature
  • ¼ cup sugar
  • 1 tsp. vanilla

Instructions

For the crust:

1. Combine cocoa powder, almond meal, and oats in a food processor and pulse until well combined.

2. Add honey and salt and continue to pulse until thoroughly combined.

3. Using a tablespoon, divide mixture evenly among 10 silicone baking cups. Firmly press it down until it becomes compact and holds together in the bottom of the baking cups.

4. Cover and refrigerate for ~ 1 hour, until set.

For the filling:

1. Using a blender or electric mixer, beat cream cheese until smooth. Add sugar and vanilla, and continue beating. Finally, add yogurt and beat until the mixture is smooth and fully combined.

2. Spoon cheese mixture into prepared cups, filling almost to the top. Place into a muffin tin and freeze for at least 4 – 5 hours, until firm to the touch.

3. Prior to serving, remove from the freezer, peel away silicone lining, and allow them to soften up for ~15 minutes. Garnish with toppings of choice.

. – . – . – .

I’m not even the biggest fan of cheesecake, but I do have to admit that I’m quite smitten with these little bites. Perfectly snack-sized, and not sickeningly sweet or mind-numbingly rich, they make a delicious pick-me-up at any time of the day. They’re not too, too sweet, which makes them a perfect base for a host of toppings – I tried strawberry jam, honey, almond butter, and caramel pudding, and all tasted fantastic.

Happy Eating!

. – . – . – .

What’s your favorite kind of cake? I think I’m gonna have to go with tiramisu. Although I’m a big fan of any kind of chocolate cake, too 😀

What kind of cake/dessert did you have for your last birthday? Chocolate cake with espresso flavored buttercream frosting. Blew. my. mind.

    GENIUS recipe! Yum.

Oh yes, I love chocolate cake as well. Remind me of this topic in our next email exchange 😀

For my last birthday, I didn’t have cake – I had warm, gooey chocolate chip cookies with vanilla ice cream. Worth the stomachaches that followed, haha.

  2. July 2, 2011 5:23 pm

Oh wow these look amazing!!!! I’ve done the same thing with lemon cheesecakes. For the base, I mixed up some plain wholemeal cookies with butter and squished it into a cake tin and let it set. Then I just mixed up some cream cheese and lemon curd and Voila! You have a lemon cheesecake. So simple!

My favourite kind of cake is chocolate mud cake with THICK chocolate icing mmmm. I don’t even think I had a cake for my birthday…or did I…wow I actually don’t remember!

    xxx

  3. July 2, 2011 5:39 pm

My favorite kind of cake is vanilla with vanilla buttercream!! For my last birthday I had an ice cream cake with a cookie crust and whipped cream on top – more of a pie than a cake, but whatever you call it, it was delicious!!

  4. July 2, 2011 5:40 pm

I am so trying this! Chocolate cheesecake is my absolute favourite cake ever (and I always have it on my birthday)…I also love any sort of super fudgey chocolate cake in general

  5. July 2, 2011 5:42 pm

Um, hi those look amazing! I think if I was to make those, I would eat them before they reach the freezer.

I looove strawberry shortcake with whip cream, red velvet with butter cream, and any rich chocolate cake with chocolate frosting. Served cold 🙂

My last birthday cake- Purple cow frozen yogurt cake with fudge frosting. (black raspberry ice cream with vanilla and chocolate chips) AMAZING!!!

I love tiramisu as well. I once made tiramisu filled cannolis which I need to do again veery soon!

  6. July 2, 2011 5:48 pm

Omg I must try this!! I am even more in love with you now. 😉

  7. July 2, 2011 5:50 pm

Mmm! I love this kind of cheesecake – simple and delicious. I always use cottage cheese or quark because I love them more than cream cheese but it is still pretty much the same. Summer bliss!

I don’t know which kind of cake is my favorite. There are too many I like 🙂 . But I hate cakes covered with whipped cream and overly sweet cakes (which are usually the cream-covered ones). For my birthday last year I bought a honey and walnuts cake and it was amazing.

  8. July 2, 2011 5:51 pm

These look unbelievably good! As a child cheesecake was actually my favorite my favorite cake, but I haven’t had it in years! This recipe looks so great though, I’m definitely going to give it a try 🙂

  9. July 2, 2011 5:54 pm

Cheesecake is my favorite cake. So these are right up my alley! All I need is some greek yogurt (just ate the last of it today :P) and I am so making these!

  13. July 2, 2011 6:28 pm

wham, bam, thank you ma’am! I’ve been doing to do some “baking” for the sake of switching things up around these parts but the heat just has kept me as far away from a hot oven as possible. This freezer inspired recipe sounds far more appealing 🙂

  14. July 2, 2011 6:37 pm

    If only I could bake…

Well, my favorite cake is vegan oatmeal spice cake. I also love carrot cake with cream cheese frosting.

  15. July 2, 2011 6:38 pm

I had lemon cake with lemon glaze!!!! Anything lemon would float my boat!! 🙂

  16. July 2, 2011 6:40 pm

OH. MY. LORD. I have to try this asap!! This looks so delicious, you’re my new dessert hero 😀

  17. July 2, 2011 6:58 pm

I’m not really a fan of actual cheesecake, but I do love no-bake cheesecakes! Especially cold ones! It’s 9am here and I could go for one right about now. It just looks so good!
Favorite cake is ice cream cake or of course any type of chocolate cake 🙂

  18. July 2, 2011 7:15 pm

This is drool-worthy, & so perfect for the hot summer!
My fav cake would have to be either ice-cream cake, or strawberry shortcake. Yum.

  19. July 2, 2011 7:36 pm

Ooooh I’m definitely bookmarking these! I have all the ingredients — except the cream cheese, but that’s easy enough to get my hands on!
My last birthday I had frozen yogurt. I got back from a 2 week trip to Spain the day before and I just wanted something that I could only get in America and was light since I had been indulging so much on the trip. This year I will definitely have something more decadent! I’m thinking homemade ice cream cake.

  20. July 2, 2011 7:39 pm

omigod these look amazing! my favorite kind of cake would have to be carrot cake, flourless chocolate cake, or cheesecake. and I didn’t have cake for my last birthday :-(, we were at a sushi restaurant.

Thats a tough one- i do love a good chocolate cake but i also love carrot raisin, a homemade berry pie, vanilla with fresh berries as well as my mom’s homemade angel food with fresh strawberry sauce! There are too many that i enjoy!
    Have a great sunday!

  22. July 2, 2011 7:51 pm

Ohhh yum, I’m all over these! Love that they’re much healthier than regular cheesecake, too!

  23. July 2, 2011 8:03 pm

so creative!! my fave cake is this chunky cinnamon apple cake my grandma makes. SO. AMAZING…..I also have a weekness for ice cream cakes…. 😉

  24. July 2, 2011 8:04 pm

I like baking so much better than cooking too. I wish I liked cheesecake though, cause those look delicious! And my favorite kind of cake? Hmm…either ice cream or cookie or chocolate cakes!

  25. July 2, 2011 8:17 pm

    This looks AMAZING!

  26. July 2, 2011 8:49 pm

Er these bites need to get in mah belly ASAP- cheesecake is my favorite! My last birthday cake was a chocolate brownie cake with one layer of choc chip ice cream and a second layer of coffee ice cream. Needless to say, that baby did NOT go to waste ;)!

  27. July 2, 2011 9:01 pm

Oh dear, those look freaking awesome! I love, love, love carrot cake! However, for my bday on Wednesday I’m getting vanilla cake with vanilla buttercream- it’s seriously one of the best cakes I’ve ever had 🙂 I get it every year haha

  28. July 2, 2011 9:28 pm

I love cheesecake. I do agree that it can be a bit too rich, though! These little bites are both adorable AND scrumptious!

Good news! I just bought a food processor today, so I can make these once I move into my apartment in a few months. SCORE! My conversation with the mom-inator:

“Can I get a food processor?”
“What for? I never used mine.”
    “For… uh… recipes!”
    “Like what?”
    “Things involving…. dates? And stuff?”

I’ve always blocked delicious-looking food-processor-requiring recipes since I’ve never had one. NO LONGER!

Chocolate cake is my favorite! But I also adore cheesecake. How about chocolate cheesecake? Toss some nut butter on there, too. HAHA!

I didn’t have a birthday cake since I was in my dorm and my parents visited for my birthday (the cake would go stale before I ate it all!), but (coincidentally enough) I had a piece of cheesecake with a candle in it at the restaurant after my birthday dinner! Delish.

  29. July 2, 2011 9:43 pm

Okay, promise you’ll believe me when I tell you that I’ve never been more excited to make a recipe in my life. Cheesecake is hands down my favorite dessert. I love it more any other food item. And, to top things off, I’m standing next to Eli’s Cheesecake stand in the Chicago airport, wishing that they had a gluten free option that I could enjoy (they’re closed anyways though). But I’m drooling over the gorgeous pieces sitting in the display case. :-p

I will definitely be making these! xoxo

These are super adorable and I love that they can have custom toppings 🙂 My favorite cake would probably be lemon poppy seed, is that stretching it? I am usually not a huge cake lover, but sometimes strawberry shortcake calls to me. Hmmm… I am pretty sure I had fro yo on my birthday, haha obviously it was eventful.

  32. July 2, 2011 10:23 pm

Those are so cute! I have to say that, even as a vegan, I’ve retained a tendency toward choosing cheesecake, and I was so happy to have a piece of vegan cheesecake at the Loving Hut restaurant here in Paris just a couple days ago–great experience for the short time that I’m here! Tiramisu is pretty smashing, too, though . . . I just need to make a vegan version. 🙂

My favorite type of cake, ohhh gosh don’t do this too me, I actually cannot decide ahah

For my 18th Birthday my mum made me a chocolate layered cake with chocolate frosting on top, decorated with white chocolate buttons.
    Chocolate indulgence or what. haha

Hope you have a great sunday 🙂

  36. July 3, 2011 12:39 am

These look great! My favourite type of cake is definitely some kind of chocolate. I used to prefer cakes from fruit and didn’t like chocolate cakes, but now it’s the opposite, hee. For my last birthday, I had TWO birthday cakes and tiramisu (I didn’t use to like tiramisu, but now I do – it’s one dessert that my brother always makes). I didn’t want a birthday cake from the store (I prefer homemade stuff), but my mom told my brother to buy it, so we did. It was an orange cake and I did not like it, as I’m not a fan of citrus desserts. I also made my own cake for the first time, but it didn’t come out well, because I used too little sugar. All in all, not a successful birthday dessert-wise!

  37. July 3, 2011 3:04 am

What a fantastic recipe! These looks and sounds awesome! So fresh and light and creamy- yummy!
My facorit cake must be a chocoate one, but Im not too big of a fan of regular chocolate cake. it needs to be chewy, like brownies! So, brownies it is 🙂

  38. July 3, 2011 3:24 am

Wow they look fab! My fave cake has to be chocolate, although I recently made some coconut cupcakes and they were fantastic 🙂

  39. July 3, 2011 4:13 am

OH they are ickle and cute!
I adore tiramisu (now just waiting for a nice vegan version to pop up in the blogosphere) and I love coffee and walnut 🙂
You know, I didn’t even get a cake on my last birthday. Even though it was my 21st! I had exams that day so we didn’t do anything… 😦

  40. July 3, 2011 4:31 am

Ohhh these look so so good!! You could try blending fruit into the cheese – I bet cherries or strawberries would be nice yummm 🙂
Hmm my fave cake? That’s a tough one! I love carrot cake or..apple cinnamon cake..or banana cake..okay okay I just love cake!!
I didn’t get a cake on my last birthday boo! But I went out for a lovely meal because we were in Paris 🙂

  41. July 3, 2011 5:01 am

I cant really just run and go get almond meal at my local grocery store, they dont carry it. I wish bloggers cooked with normal on-hand ingredients lol 😛 BUT maybe on my next venture to WF’s i’ll pick up what I need to make these!!!

I havent had cake (REAL) on my birthday in, i’m guessing, more than 5 years. Sad, I KNOW. This year I really wanted to eat some but I couldnt. Stupid ED.

My favourite kind of cake is carrot cake with cream cheese icing, which is exactly what I had for my last birthday. 😀

  45. July 3, 2011 6:34 am

  47. July 3, 2011 10:01 am

Oh my incredible. My husband is going to fall over grinning, with his mouth covered in chocolate and cheesecake, if I make these. I think you’re a true gem, girl. Most beautiful little recipe I have ever seen!

    thankyouthankyou!

    Happy weekend!

  48. July 3, 2011 10:31 am

I’ve seen at least 3 posts this week with cheesecake bite recipes! It’s really making me want to whip some up. These sound great since they’re not sickeningly sweet or too rich. And the size is a major plus. Usually when I eat cheesecake I feel sick after a few bites because it’s way too rich. And not to mention the no-bake part is perfect for summer 🙂

    • July 3, 2011 1:30 pm

Haha it’s the same way for me with regular cheesecake. Some of them are so rich that it makes me feel like my mouth is getting glued shut, which is something I really wanted to avoid with these.

  49. July 3, 2011 11:13 am

Wow those look really good, Amanda.. and so simple too! Once I can get my hands on some almond meal, I will totally make a batch 🙂

  57. July 3, 2011 5:39 pm

I’m such a cheesecake fan. Those look incredible! The addition of greek yogurt makes them total winners. Gotta remember this one! As for favourite cake, I’d have to go with either carrot cake or a really good, fudgy chocolate cake. Though for my last birthday I was craving cheesecake like nothing else so clearly I had to honour the birthday cravings. Cherry cheesecake it was and I loved every bite. Someone was just telling me about a fabulous peanut butter cheesecake they tried recently though which I’m now pretty much dying to try. I guess that wouldn’t be QUITE up your alley considering the peanut thing haha… but perhaps an almond butter cheesecake? I might need to be playing around with this now!

  58. July 3, 2011 5:43 pm

I love the no-bake concept; turning on the oven in this humidity sounds like hell!

  59. July 3, 2011 7:24 pm

  60. July 3, 2011 8:29 pm

I love cheesecake! Seriously, The Cheesecake Factory is one of my favorite places in the world. So whilst I was perusing your blog / my dad was making dinner, I thought – ooh, I’ll make these for dessert! That was before I saw that it took 4-5 hours to freeze as I neared the end of making up the recipe, haha.
Oh well, I’ve popped them in the freezer, and I think I may just dig into them after an hour, they look that good 😉

    • July 4, 2011 12:14 pm

I pulled them out of the freezer after 2 hours, and they were firm (that said, I halved the recipe)! These cheesecake bites were absolutely divine, and my parents LOVED them. Thank you for this recipe!

    • August 19, 2011 7:24 pm

To be honest, I’m not quite sure because they never last very long around here! I imagine that as long as you kept them in an air-tight container, they’d last for a good long while.
